Celebrating Maple: foodways, forests, and climate change

Celebrating Maple will offer attendees a chance to interact with and learn about one of the Northeast’s traditional foodways – maple. This simple tree that produces one of the region’s most iconic products will be the basis of talks and workshops from experts across Yale, ranging from the future of northeastern forests to the dynamic of how exactly sap moves through a maple tree and ends up as syrup. Tours of Yale West Campus’ maple grove and trail system featuring student and faculty research products will also be featured throughout the afternoon, as will tastings of the Campus’ maple products.
